These are always a big hit for my group hunts. I usually premake about 30 before the weekend, so the recipe below is often doubled.
Start by cutting up a pound of bacon (I use scissors) right into a large sauce pan. Add a tube of chirizo, chopped onions, peppers and mushroom. Sautee' down till cooked complelty. Next, add 1 dozen beaten eggs and 1 cup of milk right into pot of above. Cook until all eggs are blended well, and cooked thru.
I then take large tortilla shells and nuke them for about 15 seconds to soften them up (makes them easier to stuff and roll) Spoon in filler on tortillas, and add a generous amount of mexican shredded cheese. Add a little bit of hot sauce, then wrap up. I then wrap each burrito in wax paper. Once all done, I store in the fridge. Guys can then pull out of the fridge, microwave on high for 60 seconds. These are some tasty breakfast fillers, guys can eat whenever they want. ;D

my wife makes them about the same way. when we had 2 hogs killed last fall our slaughter house makes chirizo & we had 30# made, it`s excellent! plus our own bacon

Love them but usually Doctor up the Chorizo a bit with Smoked Paprika and a few dashes of cayenne pepper. The guys at the Fire House love em and usally has a side of OJ and Tater tots. Each guy then builds his or her own burritos.
Salsa! We also have a good chunky salsa to go along side and a bit of sour cream.
I do like the idea of premade nukable or Microwavable burritos. Good idea!
