Man I just had two rockin sandwiches and thought i would tell ya all how i do it. First off in early March get the hog pen cleaned up and ready for the new arrivals. Haul feed, clean and fill the water tank, clean out the ahh fertilizer for six months. Belly rubs and scratching behind the ears also make the meat taste better. Pick up some 16 week old layers in September, move their pens every day, feed and water and get them laying. Load up the 275 pound plus hogs and get them to the butcher shop and back out of the trailer again. Pick up the meat and sell enough to make these sandwiches cost effective. Finally I wash my hands, fry up some Canadian Bacon and two fresh eggs, place on fresh toasted potato rolls with cheese and a squirt of ketchup. I buy the rolls, cheese and ketchup-I got a job and only have so much time to cook.
