I have tried blanching at different lengths of time and followed up with an ice bath, bagged up with a seal-a-meal. I also tried no blanching and bagged up with a seal-a-meal. I was not happy with the result of any of the methods. I have gave up with the dream of fresh corn on the cob in February as a birthday present to me...
BTW, the cooking method I use; bring corn to a boil, remove from the burner, cover and let steep for ten minutes. And I have tried cooking it, thawed(in the fridge) and frozen and right into the pot.
Let me know how you make out... maybe I can bring back the dream.

I never had much luck with whole ears also. But as a kid my folks would fill half a chest freezer with cream corn. We ate it all winter long into the spring, always seemed to get more watery as the months went on.
