I do them like I do my rabbits.I fry them just until brown.Then I put them in a pan.Like a long cake pan with mashed tatters at the other end.I cover them with gravy.Like the McCormick type.Cover with foil.Bake @350 for 1hr.Enjoy!

I cut mine up into decent meat chunks. Then pan fry them. After they are fried I put them in a crock pot with a can of cream of celery, cream of potato, and cream of mushroom. Let it cook all day and serve with some corn bread! I also, do my muskrat the same way... the only difference it I let my muskrat meat sit in saltwater over night in the fridge beforehand.

Its been a while, but we would sometimes coat them with seasoned flour and fried them. Always a favorite of mine, treat them as rabbit and spaghetti. just par-boil, peel the meat off the bone, throw it in spaghetti sauce and simmer to perfection...
